Jalapeño onion rings

To me, onion rings evoke a whimsical, 1950s American playfulness that I love, and the importance of the vibe around our food cannot be discounted. Before we even taste something, the anticipation of it influences our eventual enjoyment of it. For this reason, the fun should never be left out of food.

Makes about 3 dozen

3 tablespoons ground flaxseeds/linseeds

175 ml/⅔ cup water

170 g/1 cup cornmeal

150 g/1 cup gluten-free crackers, processed into crumbs

1 large fresh jalapeño pepper, thinly sliced and deseeded if you don’t like things too spicy

½ teaspoon sea salt

freshly ground black pepper

2 large onions, cut into 2-cm/1-inch thick slices

2 baking sheets lined with foil
